Yummy Granola

6 cups rolled oats
3/4 cup hazelnuts  (optional)
3/4 cup almonds
1/2 cup pumpkin seeds
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 1/2 cup coconut flakes  (optional)
1/4 cup coco nibs (optional)
1/2 cup coconut oil
1/2 cup grade B maple syrup
1/4 cup honey

Method of Preparation

Heat an oven to 350 degrees. Combine the oats, almonds, pumpkin seeds, and any other nuts you would like into a bowl. It doesn’t matter what kind of nuts and seeds you choose to mix and match, but generally it is good to have a 3 to 1 ratio of oats to nuts.  Then put the hazelnuts in the oven for 12 minutes. While the hazelnuts are cooking, melt the coconut oil in a pan.  Once it is melted, add the syrup and honey. When the syrup starts to boil, which happens relatively quickly, take it off the heat and pour it over the nuts and oats. By this time, the hazelnuts should be done cooking. Take them out of the oven and put them in a dishtowel. Cover them and roll your hand over the towel for about 30 seconds. This should take off most of the skin. It does not have to be perfect. Pour the hazelnuts into the bowl with everything else and mix well. Add the cinnamon and nutmeg. Put the granola on a parchment lined cookie sheet, preferably two. You don’t want a thick layer of oats and nuts because it won’t cook evenly. Once it is on the trays, put them in the oven for 12 minutes. After 12 minutes, mix it up and let it cook for another 8 to 10 minutes. If it is not done to your liking after this time, repeat the mixing process and set the timer for 5 minutes. After these last 5 minutes, the granola should definitely be done. While it is cooling, add the coconut flakes and coco nips if using them. It will store for weeks in an airtight container, but you might find it disappears much more quickly.
