Spicy Peanut Veggie Noodles


1 lb Spaghetti
1 teaspoon salt

  1. Heat a large pot of water on a high flame.  While you are waiting for the water to boil, make the peanut sauce.
  2. Once the water is boiling , add the salt and drop the noodles.
  3. Cooking time always depends on the variety of the noodles. Cook them according to the manufacturers instructions.  While noodles are cooking, julienne all of the vegetables.

Peanut Sauce

1 cup olive oil
1/4 cup apple cider vinegar
1/3 cup tamari
1 tablespoons hot chili sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon fresh ginger, peeled
and minced
1 tablespoon sesame seeds,
1/2 cup smooth peanut butter
4 teaspoons salt
1 teaspoon freshly ground pepper

Whisk together all of the ingredients for the sauce. I use an immersion blender to create a smoother sauce.

Julienne The Veggies

2 peppers
2 large carrots
2 cucumbers

Julienne means cut into small sticks. Like match sticks. The easiest way to julienne vegetables is to cut them on a diagonal into small pieces.  Then stack several pieces and cut them into matchsticks. Toss with the noodles and sauce and sprinkle sesame seeds on top!
