1 lb Spaghetti
1 teaspoon salt
- Heat a large pot of water on a high flame. While you are waiting for the water to boil, make the peanut sauce.
- Once the water is boiling , add the salt and drop the noodles.
- Cooking time always depends on the variety of the noodles. Cook them according to the manufacturers instructions. While noodles are cooking, julienne all of the vegetables.
1 cup olive oil
1/4 cup apple cider vinegar
1/3 cup tamari
1 tablespoons hot chili sesame oil
1 tablespoon honey
2 garlic cloves, minced
1 teaspoon fresh ginger, peeled
1 tablespoon sesame seeds,
1/2 cup smooth peanut butter
4 teaspoons salt
1 teaspoon freshly ground pepper
Whisk together all of the ingredients for the sauce. I use an immersion blender to create a smoother sauce.
Julienne The Veggies
2 large carrots
Julienne means cut into small sticks. Like match sticks. The easiest way to julienne vegetables is to cut them on a diagonal into small pieces. Then stack several pieces and cut them into matchsticks. Toss with the noodles and sauce and sprinkle sesame seeds on top!
